Gingerbread Hotcakes

Ingredients:

2-1/2 cups flour
1-1/2 teaspoons soda
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup butter
1-3/4 cups light molasses
1 egg
3/4 cup black coffee
coconut syrup
whipped cream

Directions:

Sift together the dry ingredients. In a separate bowl, combine butter, molasses, egg, and coffee, and beat until well blended. Combine dry ingredients with molasses mixture, and beat until thoroughly blended. Bake on medium griddle. Serve with coconut syrup and whipped cream. If you want a real crazy Sunday morning (or Christmas morning) breakfast, this is it!
