Double Chocolate Peanut Butter Cookies

1 cup packed brown sugar
1/2 cup soft butter
1/2 cup shortening
1/2 cup creamy peanut butter
1 egg
2 tsp. vanilla
2 1/2 cups rolled oats
2 cups flour
1/4 tsp. salt
1/2 cup chocolate chips
36 miniature peanut butter cups

Directions:

Heat oven to 350 degrees F. (175 degrees C.). Combine sugar, butter, shortening, peanut butter, egg and vanilla. Mix until well blended. Add oats, flour and salt. Mix until blended. Stir in chocolate chips. Shape dough into 1 1/4″ balls. Place 2″ apart on cookie sheet. Bake 10-14 minutes, or until set. Immediately press peanut butter cups into the centre of each cookie. Let cool for 2 minutes before removing from cookie sheet. Serves: 3 dozen
